Kumquat Mojito
2 .5 white rum
4 kumquats quartered
3-4 sprigs of mint
Dash gomme syrup
1 soda water
1 orange juice

1. Gently crush the mint and kumquats in the bottom of the glass.
2. Half fill with crushed or broken ice.
3. Shake the rum, orange juice and syrup. Strain into glass and top with soda.
4. Top with more crushed ice if required and gently muddle ingredients together; add straws and garnish with fresh mint or kumquat leaves.

  • Or why not spread a generous serving of kumquat marmalade onto your buttered toast, homemade brioche or warm sourdough bread. You can even use kumquats in jellies and chutneys for a more cheerful, tropical taste.
     
  • Add ‘zing’ and vibrant colour to leafy green salads by adding kumquat slices and serve with an sesame orange dressing. A perfect salad for a spring time affair
  • A liquor can be made by macerating kumquats in vodka or other clear spirits.
